Ice Creams and More


A class on wonderfully rich, cream-based desserts including a sweet corn infused pastry cream, a crème anglaise (pouring custard) served with a piping hot crumble and two spectacular homemade ice cream flavours to enjoy through the summer.

  1. Salted caramel ice cream
  2. Rich chocolate ice cream
  3. Apple and blackberry crumble with crème anglaise
  4. Brown sugar sablé (French shortbread)
  5. ‘Corn’ucopia
    – Polenta and almond cake
    – Sweet corn pastry cream
    – Bocaditos (Mexican caramelised cornflakes)

We will be using my ice-cream maker in this class. You will be provided with detailed recipe notes. This class lasts about 3.5 hours.
